Date nut rolls


 INGREDIENTS


1½ cups Dates Chopped fine (food processor works best)


¼ cup Cashews Chopped


¼ cup Almonds Chopped


¼ cup Walnuts Chopped


¼ cup Pistachios Chopped


1/4 cup sunflower seeds/pumpkin seeds


2 tsp ghee


INSTRUCTIONS


Dry roast all the chopped nuts lightly and keep aside.


Heat the ghee in the same pan, add the chopped dates and sauté the dates till they are soft and combined well. 


When the dates mixture is combined and thickens, add the nuts and fold them in to combine well with the dates mixture.


Turn off the flame and allow the mixture to cool until you can handle with the hands.


Transfer the mixture into parchment paper and shape it into a log.


Optional (Roll the log in dessicated coconut)


Cover the log in parchment paper and keep it in refrigerator for about an hour.


After 1 hour, unwrap it and slice into thin rounds using a sharp knife. Mine became semi circles lol


Alternatively the mixture can be pressed into a square pan, refrigerated and cut into squares or rounds.
