Urad dhal fry

1 cup Urad Split Daal 

2 Cups Water for Soaking

11/2 a Cup water for cooking 

2 tbsp Ghee/Oil

1 Tbsp Lemon Juice

2 Tbsp Chopped Coriander Leaves

2 Cloves Garlic

2 Green Chilies

1 Tsp Salt (Adjust to Taste)

Spices

1/4 Tsp Methi (Fenugreek) Seeds

(Optional

1/2 Tsp Hing (Asafetida)

2 Cloves

1 Tbsp Coriander Powder

1 Tsp Turmeric

1 Tsp Cumin Seeds/Powder  



Instructions

Step 1

Soak Urad Lentils in water and Methi Seeds for 30 minutes; then strain the water.


 Step 2

Put the Instant Pot in Saute Mode. When hot, add 2 Tbsp of Ghee/Oil. Add turmeric, Hing(Asafetida), Cloves, Cumin Seeds .


Step 3

Add Green Chili and chopped or minced Garlic. Add water to Deglaze, if needed.


Step 4

Add the soaked lentils to the Pot. Add water. Put the lid on, seal the Instant Pot and put in high pressure for 7 minutes. Quick release the pressure.

This recipe results in Urad dal texture which is not mushy. 

On a stove top for the pressure cooker, 1 whistle should work fine.


You may also cook it without the lid on and keep stirring often until cooked but not mushy. 


Step 5

Add Coriander Powder and lemon juice. Garnish with chopped coriander and serve.
