Here is the koozh recipe.
Soak 1 cup raw rice with 1 tablespoon sabudhaana for a few hours.
Add a few green chillies and grind into a smooth consistency.
Add salt, hing and put it away to ferment overnight.
In the morning, taste the batter and add salt if needed and lemon juice if it's not tangy enough through fermentation.
Boil water (same amount as the batter)
Add the batter little by little while stirring until it thickens enough to hold shape in your hand.
Serve with ghee and curry patha.
