Almond flour katli


Ingredients

1 cup Costco Almond Flour 

1/3 cup +1 tbsp regular sugar

2 fat pinches Saffron crushed

1 1/2 tsp Rose water

1/4 cup Water

1 pinch salt


Instructions

1-Dissolve crushed saffron in 1/4 cup lukewarm water.  Let it sit for 5 minutes


2-Take a microwave safe bowl and add all the ingredients to it. Mix well with a fork


3-Now microwave it for 4 to 4&1/2 minutes on 30 seconds intervals  each. There will be about 9 to 10 of these 30 seconds cooking.

After every 30 seconds, take out the bowl. Srir with a fork. Repeat this step every 30 seconds.

Do this process for 4 to 4&1/2 minutes till your mix thickens into a tight batter. At about 4 minutes, cool it a bit. Take a small portion out of the batter and roll it into a ball. If you can make a ball without any effort, then the batter is ready. If you can not form the ball, then microwave further for 30 seconds. 

4-Set aside for cooling for a few minutes.

5- Meanwhile, spread out the parchment paper on a clean surface. Dump the Badam Katli Mix on it. Form a  ball. Cover it with another sheet of parchment paper. 

6-Roll it out with a rolling pin. It should be about 1/4th of an inch thick. 

7-Cut it into a diamond shape or make them into balls or peda (flattened ball) and enjoy 

You can also make it on stove top like a regular sweet. It won't take very long.
