Dilpasand

(Sweet bread with dry fruits and nuts filling)

Ingredients:

For the Base and covering:

Whole wheat flour         1 cup
Maida/All purpose flour 1/4 cup
Salt                                1/4 tsp
Sugar                             4 tsp
Instant fast rise yeast     I packet
Milk plus lukewarm water ¼ cup
Butter 11/2 tbsp


For the filling:

Grated coconut fresh or dry 1/4 cup
Powdered cardamom          1/2 tsp
Cane/Normal sugar.            1-2 tbsp
Tooti frooti                           1/4 cup
Dry Fruits mixture (raisins, cranberries, cherries etc).    ¼ cup                                 
Nuts mixture (cashews, almonds etc)                                       1tbsp


Method:

To make the filling:

Mix the grated coconut, sugar, cardamom powder, tooti frooti, cherry pieces and dry fruits well and keep aside.

To make the dough:

Dissolve sugar in Lukewarm milk/water, mix in yeast and set it aside for 10 mins . Once it foams add the flours, salt, butter and knead for at least 8-10 minutes into a soft and smooth elastic dough. 

Keep it in a bowl and cover it with cling wrap. Allow it to rise until it doubles in size.
Punch the dough gently and knead for a minute. Add oil if needed to smoothen dough.
Divide the dough into 2 equal parts. 
Roll one part into a big roti/disc and place it on a greased cake tin. Poke the base with fork.
Spread the filling on the rolled disc.
Roll the remaining dough and cover the filling with it. Seal the edges firmly. Make sure the filling is spread evenly to the edge. 

Poke holes on the top with a fork for steam to escape

Apply milk/ butter/egg wash on top and allow it to reat again for atleast 30 minutes.
Meanwhile preheat the oven at 350 F
Bake these for 25-30 minutes. Apply milk/ butter/ egg wash again and bake at 400 F for 2-3 minutes.
Remove from oven and allow it to cool on a wire rack.
Cut into wedges and enjoy!
